Chateau D' Lanz Swiss Licorice uses a very small amount of low fructose corn syrup as a part of our recipe.  One of the main questions we are asked by customers is why?

While licorice root is naturally sweet, we use beet sugar to help provide a consistent, natural sweet flavor in our candy.  During the cooking process, however, the beet sugar is prone to crystalizing.  To prevent this crystalization process, we add a small amount of LOW fructose corn syrup to our recipe. 

Yes, there is a difference between high fructose corn syrup and low fructose corn syrup.  Our low fructose corn syrup has a lower glycemic index rating than a pure cane sugar or a high fructose corn syrup.  The difference is very apparent when you taste the raw syrup:  high-fructose corn syrup is very sweet; low-fructose corn syrup is not sweet.  In fact, it has very little taste at all.  However, a small amount goes a long way, and has a significant impact on the consistency of texture for our product.
